Rocky Road Squares

Rocky Road Squares are ridiculously easy to make and these beauties are a perfect dessert for any occasion. They hold very well at room temperature and fulfill the sweet and salty craving, all in one bite!

Ingredients for Rocky Road Squares

  • 1 package (10 1/2 oz.) miniature marshmallows
  • 2 cups dry roasted, salted peanuts
  • 2 tablespoons butter
  • 1 package (12 oz.) semi-sweet chocolate chips
  • 1 can sweetened condensed milk

How to make Rocky Road Squares

Start by combining the marshmallows and peanuts in a large bowl. Next, add the butter into a medium pot on low heat. Once the butter has melted, pour in the semi-sweet chocolate chips and give it a quick stir. Lastly add in the sweetened condensed milk and continue to stir, on low heat, until the chocolate chips have melted.

To finish this recipe, remove the melted chocolate mixture from the stove and pour over the marshmallows and peanuts. Mix everything together making sure the marshmallows and peanuts are coated evenly. Lightly grease the bottom of a 9×13 dish and place a piece of wax or parchment paper on the bottom. I grease the bottom of the dish so the wax paper doesn’t move around while you are pouring the mixture on top. Take the mixture, scoop into the dish and gently press down with a spatula to spread it. I also found that using a piece of wax paper to evenly spread the mixture works really well. Try it! Place the finished Rocky Road Squares in the refrigerator, uncovered, for 2 hours. Once chilled, cut up into squares and serve.

Ingredients

  • 1 10 1/2 oz package miniature marshmallows

  • 2 cups salted, dry roasted peanuts

  • 2 tablespoons butter

  • 1 12 oz package semi-sweet chocolate chips

  • 1 can sweetened, condensed milk

Directions

  • Combine the marshmallows and peanuts in a large bowl.
  • Line a 9×13 pan with wax paper and set aside.*SEE NOTE
  • Place a small to medium pot on the stove and turn heat to low.
  • Melt the butter in the pot.
  • Add in the chocolate chips and condensed milk. Keep stirring until melted.
  • Remove from heat and pour chocolate mixture over the marshmallows and peanuts, mixing until everything is coated.
  • Spread mixture onto the wax lined 9×13 pan and spread out. *SEE NOTE
  • Chill, uncovered for 2 hours.
  • Cut into squares and serve.

Notes

  • I like to spray the bottom of my 9×13 dish with PAM then place the piece of wax paper. Doing this keeps the wax paper from moving around while pouring the mixture in the dish.
  • I find that using a piece of wax paper, to spread out the mixture, makes it a lot easier than using a spatula.
