These Nutted Thimble Cookies are a Christmas favorite. They take the spotlight at a good old fashioned cookie swap party. These beauties will be requested year after year!

  • 1/2 cup unsalted butter, softened
  • 1/3 cup, sugar
  • 1 egg, separated (You might need another egg white)
  • 1 cup flour, sifted
  • 1/4 teaspoon salt, sifted
  • 1 cup, finely crushed walnuts

Start by sifting the flour and salt into a bowl. Next, cream the butter. I like to let the mixer run for about a minute or so. Gradually add the sugar beating until fluffy. This will take 2-3 minutes. Drop the egg yolk in, mixing until incorporated, then add in the vanilla. Lastly, add in the sifted flour and salt and mix until a very soft dough has formed, about 5 minutes. Place the Nutted Thimble Cookie dough on a plate, cover with Saran Wrap and refrigerate for at least an hour, if not longer.

Most holidays come with at least one tradition. For my family, we would always go to my grandparents house for Christmas Eve. I swear, every year, I learned that I had another second or third cousin! Gotta love the Greek family. The spread of desserts were out of this world. From kiffles, to baklava, to many different Greek cookies and the usual Christmas cut outs. There was absolutely no shortage of sweets.

We would exchange gifts with everyone and Santa would stop by with his big red bag filled with presents. The house was loud with laughter and filled with joy. It’s nice to be able to reminisce about the Christmas Eve’s that once were. Guess it’s all part of the holiday spirit!

Ok, now that the dough has rested, let’s set up the cookie station. Dough, egg white in a small bowl, crushed walnuts on a plate, jam (or preserves) and a baking sheet lined with parchment paper.

Once the Nutted Thimble Cookies are all rolled out, take your thumb and gently press down on the ball leaving a small indentation.

Finally, top the cookies with a teaspoon of jam/preserves. Bake for 14 minutes. The Nutted Thimble Cookies should be light in color with a slightly darker bottom. Remove baked cookies to a wire rack and cool.

Ingredients

  • 1/2 Cup Unsalted butter, softened

  • 1/3 Cup Sugar

  • 1 Egg, yolk and white separated *SEE STEP 10

  • 1/2 Teaspoon Vanilla

  • 1 Cup Flour, sifted

  • 1/4 Teaspoon Salt, sifted

  • 1 Cup Walnuts, finely chopped

  • 1/4 Cup Your favorite jam or preserves

Directions

  • Preheat oven to 375ºF
  • With the paddle attachment, cream butter. 2 minutes.
  • Gradually add sugar beating until fluffy. 5 minutes.
  • Beat in egg yolk and vanilla.
  • Slowly add in the sifted flour and salt. Mix until a soft dough forms.
  • Chill for at least on hour.
  • Remove from refrigerator and take a small piece of dough, rolling it into a one inch ball. Continue until all the dough is used.
  • Lightly beat your egg white in a bowl and place the finely chopped walnuts in another bowl.
  • Lightly grease a baking sheet.
  • Roll the balls into the egg white (you might need to use another egg white), then chopped nuts.
  • Place on the baking sheet. Press an indentation, into the cookie, with your thumb.
  • Fill the cookie with about a teaspoon of your favorite jam or preserves.
  • Bake for 14 minutes. Cookie should be light in color. Bottom of cookie should be slightly dark.
  • Cool on wire rack.
