hourSoft, moist banana bread with chucks of banana and cream cheese.
Ingredients
1/2 Cup Vegetable Oil
1 Cup Sugar
2 Eggs, slightly beaten
4 (Ripe) Bananas, 3 smashed, 1 whole, cut into pieces
2 Cups Flour, sifted
1 Teaspoon Baking Soda, sifted
1/2 Teaspoon Baking Powder, sifted
1/2 Teaspoon Salt, sifted
3 Tablespoons Milk
1/2 Teaspoon Vanilla
4 Ounces Cream cheese, cut into small pieces
Directions
- Preheat oven to 350ºF.
- Beat the oil and sugar until combined.
- Add in the eggs and 3 smashed bananas.
- Sift together the flour, baking soda and powder and salt into a bowl.
- Slowly blend the flour mixture into the wet batter.
- Add in the milk and vanilla, beating well.
- Fold in the cream cheese and banana chunks.
- Spray a loaf pan with cooking spray and pour the batter into the pan.
- Bake in the oven for about an hour or until a toothpick comes out clean.
