Chicken Tziki Salad

Tender chicken coated in a creamy Tziki sauce then stuffed into a hollowed out tomato. Serve with grilled NAAN bread, feta and olives.

Tender chicken coated in a creamy Tziki sauce then stuffed into a hollowed out tomato. Serve with grilled NAAN bread, feta and olives.

Ingredients

  • 1 Cup YIA-YIA’S TZIKI or your favorite brand

  • 2 Cups Diced chicken (A rotisserie works great here) *SEE NOTE

  • 2 Large tomatoes, tops removed and hollowed out

  • Chives, extra virgin olive oil and crumbled feta for garish

  • 2 Naan pieces (STONE FIRE MINI)

Directions

  • Make Yia-Yia’s Tziki recipe or have your favorite brand ready.
  • Cut up the chicken into bite sized pieces and place in a medium bowl.
  • Cut the tops of the tomatoes and hollow out with a spoon.
  • Mix the Tziki in with the chicken.
  • Place the NAAN mini’s on the grill and lightly char.
  • Place the tomatoes on top of the NAAN bread.
  • Stuff the tomatoes with the salad and add a drizzle of olive oil.

Notes

  • IT ALL DEPENDS HOW BIG YOUR TOMATOES ARE THAT WILL DETERMINE HOW MANY CUPS OF CHICKEN.
