Beefy Cheesy Bean Burritos are filled with seasoned beef, creamy refried beans and melty Monterey Jack cheese all rolled into a soft, flour tortilla shell.

These Beefy Cheesy Bean Burritos are perfect for any night of the week. In mere minutes you will have made a tasty and filling dinner for the whole family to enjoy. I normally serve my Mexican inspired dishes with refried beans or rice but since this dinner is all wrapped into one, I like to serve a salad or even some fruit (grilled pineapple with brown sugar) to go along side.

Ingredients for Beefy Cheesy Bean Burritos

  • 1 lb. ground beef
  • 1/2 onion, diced
  • 1 1/2 tsp. Chili powder
  • 1 tsp. Cumin
  • 1/2 tsp. EACH Smoked paprika, salt and pepper
  • 1/4 tsp. EACH Garlic powder, onion powder and oregano

1 can refried beans

1 4oz. can diced green chilies

1/2 cup salsa

1 1/2 cups shredded cheese (cheddar, Monterey)

8 flour tortillas, (soft taco kind) softened

Sour cream, optional

How to make Beefy Cheesy Bean Burritos

Start by heating up a skillet medium high heat. Place your ground beef in the skillet and cook until brown. Next add in the onions and continue to cook until the onions become soft. If you notice a lot of liquid in the skillet go ahead and drain some. Otherwise just keep going!

Let’s finish up the meat mixture for your Beefy Cheesy Bean Burritos. Continue by stirring in the spices, salsa, refried beans and lastly 1 cup of the shredded cheese. Make sure you stir the mixture each time you add an ingredient to make sure everything gets combined.

“Taco Tuesday”

I have to be honest. I love that most days of my week have a type of cuisine designated to a day. It makes for a much easier time coming up with ideas for dinner. So with that being said, most Tuesday nights, we do something Mexican. And there are so many ideas out there for Mexican food.

These Beefy Cheesy Bean Burritos remind me of a Taco Bell meximelt. I remember, quite vividly, going to Taco Bell several times a week in high school. My true go to was their soft tacos and when their soft tacos supreme came out…well, it was everything to me! I loved how they came individually wrapped, still warm and packets of hot or mild sauce to pour on top.

Taco Bell has so many different options these days. And thanks to their ever changing menu, I get inspired to create my own version. Not only are they easy to “copycat”, but most, if not all, are made with very few ingredients.

I have a go to Creamy Chicken Enchilada recipe and a Smoked Tomato and Tomatillo Salsa recipe that are super easy and delicious if you want to check them out. Quick behind the scenes moment. Those 2 particular recipes were one of my “firsts” when I started this blog. I’m sure you will notice a difference in my writing and pictures. Well damn, I hope you do and for the better!

Time to Wrap this up

Start by warming up your tortillas, simply to make them more pliable. I like to take a little sour cream and spread it on the flour tortilla add a little more cheese (you are using the reminder 1/2 cup of the cheese). Lastly I add about 1/3 cup of the beef mixture and wrap on up. I take each side and fold it in then roll it.

Ingredients

  • 1 lb ground beef

  • 1/2 onion, diced

  • 1 1/2 tsp. chili powder

  • 1 tsp. ground cumin

  • 1/2 tsp. EACH smoked paprika, salt and pepper

  • 1/4 tsp. EACH garlic powder, onion powder and oregano

  • 1 can refried beans

  • 1 4oz. can drained green chilies

  • 1/2 cup salsa

  • 1 1/2 cups shredded cheese

  • 8 soft taco flour tortillas

  • sour cream (optional)

Directions

  • Brown the ground beef in a skillet.
  • Add the diced onion and continue to cook until the onions become soft. *SEE NOTE
  • Continue by adding the spices, salsa, refried beans and 1 cup of the shredded cheese, stirring to combine after each addition.
  • Warm tortillas and spread sour cream on top.
  • Top with a little more cheese (this is where you are using the remainder of the cheese).
  • Lastly add about 1/3 cup of the beef mixture to the tortilla and wrap it up. *SEE NOTE
  • Cut in half and enjoy.

Notes

  • You can add the onions when you place the ground beef in the skillet.
  • Start by folding in the sided and then roll it up.
