Spinach and beef soup is made with ground beef, spinach, petite diced tomatoes, pasta, shredded cheddar and a combination of chicken and beef broth. The combination of the 2 different broths enhances the flavor.

When my mom told us that we were having soup for dinner I thought I would starve to death. Soup, really? Ugh. What kid really likes soup? Well, “this kid”, didn’t. Broth, veggies and maybe (if we got lucky) noodles too. The addition of noodles helped a bit but it still wasn’t a dinner I would look forward to…until. Until I started to grow up and experience many and oh so many different kinds of soups. Seriously, there are so. many. out. there.
I started to make soup in my 20’s (like last year…)and really started experimenting and enjoying these bowls of flavor explosions! Soups can be so very simple to make yet come out tasting like you were up all night burning the midnight oil to get some crazy tasting depth of flavor. The best part? You don’t have to be up all night, that is unless you’re dreaming of what kind of soup you want to make! I introduce you to, the Spinach and Beef Soup.
List of Ingredients for Spinach and Beef Soup
- Chicken AND Beef Broth
- Ground hamburger
- Petite diced tomatoes
- Onion
- Frozen spinach
- Dried pasta (any shape you want!)
- Shredded cheddar

Let’s get this done! Put a little oil in a large stock pot and cook the ground beef and chopped onion until meat is cooked through and onions are soft. Drain.


Then add in the rest of the ingredients. Your diced tomatoes, chicken and beef broth, frozen spinach (no need to thaw), and cheese. Let the group get to know each other and intertwine. Bring to a boil and then reduce heat to a simmer. No need to cover. I like to simmer it on low for an hour.



At this point, when the soup is ready, I like to add in my pasta. Again, bring the soup back up to a boil and add in your pasta of choice. I like to use the smaller shape pasta because this soup is more broth based than a hearty, denser soup. Of course I am not the soup police so do as you wish! On a side note, I think tortellini would be a great addition to make this soup even heartier.
Sometimes I have leftover pasta and I’ll use that however, I recommend cooking the pasta in the soup broth as it absorbs the broth flavor. Place the cooked pasta in the simmering soup, stir and you’re golden! This simple, yet flavorful, dish started my love of soup. I always have a smile on my face when I make this because I used to loathe soup so much and now, well, I love it!. kcalThis soup comes together in no time! Only a handful of ingredients but the combination of broths takes this soup up a notch. Very simple ingredients yet very satisfying. Enjoy!
Ingredients
1/2 pound gr. Beef or Turkey
1/2 cup chopped onion
1 48oz can of chicken broth
1 48oz can of beef broth
1 14 oz can petite diced tomatoes, undrained
1/2 cup shredded cheddar cheese
1 package frozen chopped spinach
1/2 cup dried noodles (whatever your favorite is)
Directions
- Use a deep pot and heat to medium.
- Add the ground beef and onions. (If using a leaner meat I recommend adding a bit of olive oil to the pan so that it helps cook the onions).
- Once the ground beef is cooked drain any excess fat and return the pot back to the stove.
- Add the next 5 ingredients and bring to a simmer.
- Once the soup has come together I add my dried pasta and cook accordingly.
- Ladle the soup in bowls and top with extra cheese if you’d like.
Notes
- I always add my dried noodles shortly before I’m ready to serve the soup. I find that the noodles like to absorb the liquid and expand.
- You can always cook your noodles and put them in a sealed container until you are ready to eat the soup. Just drop them in the soup and heat.
- Instead of noodles try tortellinis!
