French Onion Chicken takes on a classic French Onion Soup recipe and adds sautéed chicken and mushrooms for a tasty addition. Serve on top of creamy mashed potatoes.

I absolutely love anything French Onion, especially French Onion soup. However, I thought what if I turned that recipe into a complete dish? This French Onion Chicken recipe has checked all the boxes and then some. I couldn’t be more happier how this dish turned out.
Ingredients for French Onion Chicken
2 lbs. boneless, skinless chicken thighs
2 lbs. sweet onions, sliced
8 oz. Cremini mushrooms, sliced
2 garlic cloves, minced
2 oz. white wine
2 tsp. Worcestershire sauce
1 tsp. dried thyme
1 Tbsp. butter
1/3 Cup, Extra Virgin Olive Oil
2 Tbsp. flour
2 Cups, beef broth
5-7 ounces, Gruyere cheese, shredded
Salt and Pepper, to taste

Onion and Mushroom Mixture
Using a large, heavy skillet, add the butter and 1/4 cup of the olive oil to the skillet. Once the butter is melted, place the onions, mushrooms, thyme and pepper into the skillet tossing to combine.



At this point you are looking to caramelize the onions and cook down the mushrooms. This is a fairly slow process. By slow I mean 20 minutes or so. The heat should be on low to low medium. Every so often stir everything around and continue cooking until your mixture looks like this.

Alright, let’s move on. Continue by adding in the garlic, salt and Worcestershire sauce cooking for another minute or so. Remove onion mixture to a bowl and set aside.
Cooking the Chicken
Using the same skillet, no need to clean it, add in the remaining olive oil. Next, season both sides of your chicken thighs. When the oil is shimmering go ahead and add in the chicken thighs. Cook until you get nice browning on both sides and the chicken is cooked through. Remove to a plate and set aside.



French Onion Chicken Broth
While the skillet is nice and hot, carefully pour in the wine scraping up any bits stuck to the bottom. Turn the heat down and add in your onion mixture and sprinkle with the flour. This, here, is the start of something beautiful.


Once you add the flour go ahead and mix it in with the onion mixture. Slowly pour in the beef broth and stir. With the heat on medium, continue to stir until the broth thickens. The French Onion Chicken broth is well on its way now!


As I mentioned earlier, I just love French Onion Soup. When we used to go out to dinner and I saw French Onion Soup on the menu, well I was as happy as a pig in….(I’m not going to say it, You say it). I am telling you I never really liked soup growing up, but there was something about this insanely flavorful bowl of broth, onions, a hearty piece of bread and a healthy amount of melted cheese all in one! I mean, come on!
While typing this post I found it very important to see where this wonderful soup originated from. Ok, ok, go ahead and say it. Duh, it originated from France. Yes, I know, but did you know that perhaps a King or a Duke maybe had their hand in it? Anyway, I think I should keep “my hand” in blogging about recipes and leave all that historic stuff to some of you out there.
Sorry for the delay. Let’s finish this French Onion Chicken recipe up and go about our day.
French Onion Chicken Here We Come!
Now that your sauce has thickened, it is ready for the chicken to be added. Once you add the chicken it’s time to let it rain! Rain Gruyere that is!


Lastly, turn your broil on high and once ready, place the French Onion Chicken in the oven to melt the cheese. This takes seconds to happen so don’t go anywhere. Carefully remove from the oven and sprinkle with freshly chopped parsley.

Seriously. LOOK AT THAT! Ok, so there you have it. French Onion Chicken. I find this dish to be incredibly versatile as far as what to serve with it. You can stick to the French Onion Soup way and serve it with some toasted French or Sourdough baguette. How about even doing a garlic butter spread on the bread to elevate this dish even more?
Of course, you can never go wrong with buttered noodles. I think I would choose egg noodles, but that’s obviously a personal preference.
Hmm, polenta even?

French Onion Chicken

Ingredients

2 cups beef broth
5-7 oz Gruyere cheese, shredded
salt and pepper, to taste
Directions
- In a large, heavy skillet add the butter and 1/4 cup of olive oil.
- Once butter is melted, add in the onions, mushrooms, thyme and pepper to the skillet.
- Toss to combine.
- Cook on low heat until the onions and mushrooms have caramelzied. 20 minutes. Stirring occasionally.
- Remove to a bowl and in the same skillet add in remaining olive oil.
- Season chicken with salt and pepper and place in skillet.
- Cook chicken until browned on both sides and cooked through. Remove to plate.
- Keeping the skillet hot, pour in wine scraping up any bits.
- Turn the heat to low and add in the onions mixture followed by the flour.
- Mix until combined.
- Slowly pour the beef broth in and stir. Continue to stir until the broth thickens.
- Add the chicken thighs to the skillet.
- Top with the Gruyère cheese.
- Place under the broiler until the cheese melts and becomes golden and bubbly.
- Remove from heat and sprinkle freshly chopped parsley on top.
- Serve over mashed potatoes. *SEE NOTE
Notes
- You can serve this with toasted French or sourdough baguette, egg noodles, polenta or rice. Options are endless.
