Ceasar Salad

Ceasar Salad is a combination of lemon juice, Worcestershire sauce, tossed together with garlic infused oil. This particular Ceasar salad recipe has been around for as long as I can remember (and the “I can’t remember what I did 5 minutes ago”, does not apply here). Add some grated parmesan to this and I think you’ll find yourself wanting to eat this all by yourself. I might’ve done that a time or too.

This dressing is a lighter and brighter version and is a nice change from the creamy one. It also has very few ingredients, so getting good quality ingredients is key. Let’s start with a head of romaine that is not wilted and tightly packed. Next up you’ll want to find a bright, soft lemon that screams juice! Alternatively, if the lemons you come across are hard, put them in the microwave for about 30 seconds and roll on your countertop to get those juices flowing. Time for cheese. I happen to love Locatelli cheese and when I can’t find a block of it, I buy the already grated version. And the bigger the garlic cloves the better, but sometimes you can’t have it all!

  • PRODUCE: Romaine lettuce, garlic and lemon

  • Extra Virgin Olive Oil
  • Worcestershire Sauce
  • Grated cheese

Ceasar salad preperation

First, grate or mince the garlic into the olive oil and let it sit for an hour. The longer the garlic hangs out in the olive oil, the more infused it will become. Next, combine the Worcestershire sauce and freshly squeezed lemon juice in another small bowl and set aside. When you are ready to assemble the salad, clean the lettuce and cut up or tear into small pieces.

Assembling the Ceasar salad

Lastly, place your lettuce in a large bowl and sprinkle the grated Parmesan cheese on top. Drizzle your garlic infused olive oil all over the lettuce. Take a small whisk, or fork and mix the lemon juice and Worcestershire sauce (by the way, after this post I will never forget how to spell Worcestershire!!!) and immediately pour over the lettuce. Sprinkle the salt and pepper and toss to coat. That’s it!

Worcestershire sauce, lemon juice and garlic olive oil turn this Caesar salad into a lighter and brighter version instead of the thick, creamier version.

Ingredients

  • 2 cloves of garlic, peeled and grated

  • 1/2 cup of extra virgin olive oil

  • 4 tsp. of freshly squeezed lemon juice

  • 1 Tblsp. of Worcestershire sauce

  • 1 head of Romaine lettuce chopped

  • 1 tsp. Kosher salt, or more to taste

  • 1/2 tsp. ground white pepper

  • 1/2 c. of grated Parmesan cheese

  • *SEE NOTES

Directions

  • Combine the grated garlic and extra virgin olive oil and let sit for an hour, or more.
  • Combine the Worcestershire sauce and lemon juice and set aside.
  • Put your lettuce in a large bowl and season it with your salt, pepper and grated Parmesan cheese.
  • Pour the garlic olive oil over the lettuce.
  • Briefly whisk the lemon juice and Worcestershire sauce and pour over top.
  • Toss the salad and serve.

Notes

  • You can add grilled chicken or any other grilled meat to this salad to beef it up some.
  • Croutons can offer a nice crunch. (I don’t like them so that’s why you don’t see them)
